Baked Eggplant Fries

NO OIL -- NO FRYING!
Healthy version for fried eggplant - it taste just as good and is so much better for you.

WHAT YOU WILL NEED:
-1 Eggplant
- Original Bread Crumbs
- Salt
-Pepper
-Garlic Powder
-Nutrional Yeast
*Nutrional Yeast you can find at whole foods, or any health food store. It is packed with B12 and used to make Vegan cheese. This part is really optional but it does give such a good flavor so I highly recommend it.
- Coconut Milk
* I choose to use coconut milk because it is thick and hold the crumbs together nicely.
HOW TO MAKE:
-Bake oven to 400
-Mix all your dry ingridents together into a bowl
- Poor 1/2 cup coconut milk into a bowl
- Place raw eggplant into milk , then place into bread crumbs, and place onto baking sheet lined with parchment paper.
-Bake Eggplant for 15 minutes on each side until golden color
Let cool off & serve with a side of marinara sauce sprinkled with parsley flakes :)
