Budget Friendly Vegan Crab Cakes!

*Bumble Bee Crab meat in a can retails at local grocery stores in Florida for $6.99 , Fresh Crab meat ranges from $16.95- $26.95 Per lbs in local grocery stores. * THAT IS JUST TOO MUCH MONEY!

This vegan crab cake recipe is better than soft shell crab cakes and will only cost you $2 and some change for the main ingredient! Artichokes have a very similar texture as crab meat does and Joey will eat these babies right up. So those of you who have a non-vegan partner and want to cook a meal for the two of you this is a perfect option.

** MAKES 10 CAKES**

WHAT YOU WILL NEED:

1 jar of marinated artichokes (I buy mine from ALDI)

1 lemon

Liquid from the marinated artichoke

Celery

White onion

Almond or soy milk

Oil for frying

Sugar

Old Bay Seasoning ( IMPORTANT)

Sea salt

Cracked pepper

Breadcrumbs (Original)

Flour (I use soy flower) (non bleached)

HOW TO COOK:

-Drain your marinated artichokes saving 2 tablespoons of the marinated juice/ Chop the artichokes in to small fine pieces you will want 2 cups worth of artichokes/ Add to medium sized bowl/ Add in to mixing bowl 1/4 C chopped white onions, 1/4 C chopped celery, 2 tsp lemon juice, 2 tsp, 1/2 C flour, 1/4 tsp cracked pepper, 1/4 sea salt, 2 tsp old bay seasoning. Mix well together with a fork.

- Add flour to a dish, breadcrums to a dish, and almond or soy milk to a bowl (kinda guess how much you'll need I did not measure this part)

-Take 1/4 cup of mixture and form a patty/ place patty into flour mixture, place patty into milk mixture quickly, then place into breadcrumbs. Repeat the batter before frying.

-Heat 1 1/2 C iof oil into frying pan on medium high / Fry to 3-4 minutes until golden brown flipping the patty half way through.

-Remove cakes onto a plate with a paper towel to absorb left over oil.

-Serve right away with side of old bay lemon dipping sauce and I add green onions for brightness :)

DIPPING SAUCE:

- Mix into a small bowl

- 2/3 C vegan mayonnaise

- 3 tsp lemon juice

- 1tbsp chopped fresh dill

- 1/4 tsp ground pepper

- 1 tsp old bay seasoning
